ADV: AsiaMalls Food On Parade - White Sands Masterclass by Chef KF Seetoh
Thai festive mood arrived early with chirpy Thai songs blasting away at the event space of White Sands for AsiaMalls Food On Parade, Thai Masterclass Demonstration by Chef KF Seetoh, of the popular television show MakanSutra.
The crowd were listening in eagerly as Chef Seetoh demonstrated two dishes for the afternoon. First up, Yum Voon Sen, or Thai Vermicelli (or Glass Noodles) Salad with Seafood.
With deftly hands and an even deadlier mouth (no wonder he is such an auntie-killer!), Chef Seetoh truly entertained the crowd with his words and antics without forgetting the finer details of preparing this dish – “soaked the blanched vermicelli in cold water to stop the cooking process” and “…do not overcooked the squid like they always said, otherwise they end up like your father’s car tyres!”
Not forgetting the secret ingredient to the dish, Dried Shrimp Powder, to sprinkle all over the vermicelli to give it a nice taste and flavour, the salad was swiftly served on a dish and soon distributed quickly to the crowd.
Chef Seetoh moved on to his second dish of Khao Tom Mad, or Thai Banana with Sticky Rice, which he learned from a Thai Chef who served this dessert to the Thai Royal family.
Steps were pretty simple but time consuming – glutinous rice need to be soaked for 3 hours minimum, and cooking process of rice with coconut cream takes roughly 40 minutes, however the real act came when it comes to the wrapping of the dessert. Even HFB had a problem catching up with the wrapping method.
Nevertheless, the crowd enjoyed it and smiles eluded all over their faces when it came to the favourite segment of the class – SAMPLING TIME!
Later in the afternoon, the event hall was turned into a Thai cooking workshop for kids.
After some house rules by the instructor – “Wear your gloves” and “Do not put your spoon in your mouth”, the kids were on their way to toss their Thai Green Mango Salad with condiments.
HFB was truly inspired by this particular little girl who was really attentive during the workshop and truly engrossed in her labour of love.
Within minutes, her Thai Green Mango Salad was neatly wrapped with Rice Paper and she went home happy with her food!
